Chef Chanin Jakassed has worked all over Thailand in renowned hotels and resorts in Koh Samui and Khaoyai, and has also worked in Seychelles. He is currently one of Mandarin Oriental Dhara Dhevi, Chiang Mai’s sous chefs. In his team are Chef Pattamawadee Laocharoen; Chef Wathit Rungrotwattana; and Chef Thanapat Thirakiatchai.
The all-day dining Paseo Uno, which will feature a contemporary Thai décor during the festival, plays host to guest chef Chanin Jakassed and his team when they present the exotic flavours of classic Thai and Northern Thai cuisine that are popular in the luxury resort’s Le Grand Lanna restaurant. Dishes that will be featured lunch and dinner buffets include: Pa Neang Neur (Thick and creamy red curry with beef); Sa Tay Gai (Charcoal grilled chicken satay with peanut sauce and cucumber relish); Geang Aom Moo (Northern style curry pork with kaffir lime leaves); Lab Gai (Spicy ground chicken, shallot , spring onion with ground sticky rice); Tom Yum Goong (Spicy prawn soup with fresh herbs and straw mushroom); and Goong Phad Nam Prik Pao (Stir fried prawn with baked chili paste and basil), among others.
With Mother’s Day celebration falling on May 8 during the food promotion, Paseo Uno offers mothers and women availing of the Thai buffet lunch and dinner throughout the festival, a chance to win vouchers for The Spa at Mandarin Oriental, Manila and the hotel’s restaurants and bars.
To those who love Thai food, I suggest you make your reservations now because I tried it and it is simply to die for. I am drooling as I type this. IT'S THAT GOOD!!!!
Thai Cooking Class
For those who wish to recreate the sweet, savoury, spicy and sour flavours of Thai cuisine at home, Chef Chanin conducts a special cooking class on May 7 at 9 am, in the tradition of The Oriental Culinary Academy in the luxury resort.. Cooking enthusiasts will be taught to make Phla Pla Tuna (Spicy lemongrass salad with Tuna loin); Pa Neang Aok Ped Yang (Thick and creamy red curry with duck breast) and Tab Tim Grob (Chilled water chestnut rubies in sweet coconut milk). The cooking class is priced at PhP3,500 nett, inclusive of a continental breakfast of homemade pastries; three-course lunch consisting of the cooking class menu, and a custom souvenir apron. Those who register for this cooking class and the French cooking class on April 30 by The Tivoli Executive Sous Chef Remi Vercelli, the hotel are offered a 15% discount.
